GROUND :

Granitic. It comes from the Hinterbourg locality.

GRAPE-VARIETY :

Pinot Noir.

WINE-HARVEST :

By hand with selevtive picking.

WINE-MAKING :

Maceration during 8 days and manual punching the cap during 5 days, maturing in Burgundian oak barrels during 12 to 18 months, bottled without fining and filtration.

BOTTLE AGEING :

2 to 5 years.

WINE TASTING :

Red fruit aromas (cherry, blacurrant) ; in the mouth it is elegant, fresh and nice persistency.

EXAMPLES OF COURSES :

Grill, red meat, game, cheese...

The alcohol abuse is dangerous for health. To consume with moderation.
