WINE-HARVEST :

End october, by hand with selective picking.

WINE-MAKING :

Long pressing during 8 to 10 hours, long fermentation : 3 to 4 months with natural yeasts, maturing on the fine lees during 6 months.

BOTTLE AGEING :

5 to 10 years.

WINE TASTING :

Complex nose : crystallized fruit, exotic, spicy, honey; powerful, syrupy and well balanced mouth.

EXAMPLES OF COURSES :

Apertive, dessert with fruits, goose liver.

The alcohol abuse is dangerous for health. To consume with moderation.
